La cantina

The cellar

The working cantina where the estate’s wines are made.

Everything the estate bottles is made here, on the property, close to the vines it comes from.

The scale is small and the cellar shows it. Steel tanks for the fermentation, large oak casks along the wall for the wine that needs time in wood, and a room under a brick vault where the bottles lie until they are ready.

The red that carries the estate's name is Sangiovese with a small share of Cabernet Franc, and part of it is aged in wood. In some years the Cabernet Franc is held back and bottled on its own instead — a few hundred bottles, and then not again for a while.
